בצק "ספייה" - מנת בצק שטוח, שעליו יש מלית בשר עם תוספות, הנאפה בתנור (כמעט אחד לאחד כמו מנת "המסאחן", רק שהוא עם בשר בקר או כבש, ולא עוף וכו') #מצרכים, וטכניקת ראש בצק - עושה טכניקת ראש בצק בתחילה (כמו במתכון פיצה). שמה כוס מים על כוס קמח, שמרים וסוכר. מערבבת היטב לכדי עיסה דלילה, ומחכה. אח"כ מוסיפה כוס קמח נוספת, מלח ושמן זית. עדיין אמור לצאת לכאורה קצת דביק (צל"ע ההדרציה המדוייקת בסך הכל של בצק זה). #התפחות - לא ראיתי שעשתה התפחה !!! מוזר נורא, חוץ משחיכתה 10 דק בין הקמח של ראש הבצק, להוספת שאר הקמח. מ"מ עיצבה לכדורים, והמשיכה בעיצוב לרידוד למעין פיתה, מועכת אותה עם האצבעות (אולי מסביר למה אין בה כמעט התפחות. יש שימוש בענין אצבעות אלו גם בבצק הפוקאצ'ה), מברישה בשמן זית, ושמה עליה המלית. #אפייה - אופה בחום גבוה מאוד, 240 מעלות (וכנראה אם יש טאבון עדיף לכאורה).

דברים שאמר על בצק פיצה (מתכון של אייל מאפים טובים. סרטון אחר, לא זה) - שצריך 600 מ"ל מים על 1 קילו קמח (כידוע שבערך 600 מל, כי הדרציה גבוהה נותנת אוורריות גדולה. כאן הסביר את זה, בכך שמים הרי מתאדים, וככל שהבצק מורכב מאחוז יותר גבוהה של מים, נוצרים יותר כיסי אויר כתוצאה מהתאדות המים) , שאיתה אני מזדהה . אני לא מבין את מה שאמר על כך שההעשרה בשמן, עושה את הבצק (הלח לפני אפיה) ליותר "רך" - מה שצריך להבין זה מה הוא עושה לבצק אחר אפיה , ולפי מה שידוע לי חוץ מזה שהוא נחשב נוזל לאחוז ההדרציה שהזכרנו לעיל, משמעותו ביחס למים זה רק "טעם" (יכול להיות גם שהוא יוצר פחות כיסי אוויר ממים), בוודאי כאן שמדובר בכמות קטנה, וכן לא מדובר בטכניקות מסויימות של נתינת אפקט שומני לבצק (כמו טכניקות מרוקאיות שונות) . אבל כמובן אשמח להחכים אם ישנה משמעות נוספת גם באופן כזה של הוספת שמן, לא נראה לי שזה באמת עושה את הבצק יותר רך ויל"ע . גם הטכניקה של "ראש בצק" שהזכיר כאן בתור ניטרול בעיית המלח ביחס לשמרים , קודם כל לא ראיתי זאת במתכונים איטלקיים לפיצה !, שנית אם כבר הבאת זאת ממתכונים אחרים, למה לא להביא את הטכניקה הקלאסית , שפשוט שמים את המלח לאחר התגבשות ראשונית של הבצק ,לא מובן .

אחרי הלישה במיקסר צריך לעבד את הבצק עם קיפולים ואחר כך לתת לו לנוח שעתיים שכל חצי שעה עושים לו קיפולים ומכדררים מחדש. ואז שולחים אותו להתפחה קרה של מינימום 24 שעות
